“THAI CHICKEN STIR-FRY WITH SPICY PEANUT SAUCE” IS IN:

THAI CHICKEN STIR-FRY WITH SPICY
PEANUT SAUCE
 
2 whole chicken breasts, skinned, boned & cut into bite-size pieces
1/2 cup peanut butter
1/2 cup water
2 tbsp. soy sauce
1 tbsp. brown sugar
2 tbsp. peanut or vegetable oil
4 cloves garlic, minced
1/2 tsp. crushed red pepper
3 to 4 cups sliced broccoli or spinach

In a small bowl, blend peanut butter, water, soy sauce and sugar; set aside.

In a wok or large skillet, heat oil over high heat. Add garlic and pepper; stir-fry 30 seconds. Add chicken, stir-fry until firm and white, about 5 minutes.

Add broccoli or spinach, stir-fry until bright green, about 3 minutes. Stir in peanut butter mixture. Cook, stirring constantly until sauce is smooth, about 3 minutes.

Serves 4.

Really yummy and easy! I added a tiny bit more soy sauce and brown sugar to the sauce. I also added a little garlic salt and ground cayenne for a bit more kick. It was awesome.

Pretty tasty. I added some honey and sriracha hot chili sauce for some extra spice and served over coconut jasmine rice. My husband thought it was too peanuty. I would make this again, but try it with less peanut butter.

Need to be careful not to overdo it with the peanut butter, I'll agree it was a little too much. Hot chili sauce would be a good addition.

I loved this recipe. It was easy, and quick. I used sesame oil instead of the vegetable oil. Also, I threw in some yellow peppers to give the recipe some extra color. Both variations were a great addition. Highly recommend it if you have a peanut butter craving!

There's no acid in this recipe to speak of. A touch of rice wine vinegar adds some balance to the flavor. Also 1/4 cup of peanut butter is more than enough and extra chunky provides some nice texture to the finished product.

I tried this recipe but added a bunch of veggies like water chesnuts, snap peas, bean sprouts, baby corn, etc. I also put the stir fry over udon noodles with a side of white sticky rice. Added a little extra soy sauce, peanut butter, and brown sugar to accomodate with the extra veggies. Crushed pepper flakes for added heat. My boyfriend and I loved the meal. Can't wait to make for family!

I've made this recipe 4-5 times and it was excellent. I find it a little too spicy for my taste and my girlfriends finds the soya taste is too present, so we do it with 1/4 tsp. crushed red peppers and just 1 tbsp. soy sauce, but we do add an extra 1/4 cup of peanut butter.
