OLD FASHIONED EGG PIE | |
This recipe was given to me 25 years ago by an 80 year old lady. 4 eggs, beaten slightly 3/4 cup sugar salt, to taste 1 tsp. vanilla 2 1/2 cups scalded milk 9-inch prepared pie shell (I use Pillsbury) ground nutmeg 1/4 cup (1/2 stick) butter, cut into pats Preheat oven to 400°F. Blend eggs with sugar, salt and vanilla. Slowly add scalded milk, while stirring. Pour custard into pie shell. Sprinkle with nutmeg and dot with butter. Bake at 400°F for 25 minutes or until barely firm. Pie will set when cool. Note: To prevent custard from running through pastry - don't prick pastry with fork. Be sure pastry stands up a bit around edge. Slightly bake before pouring custard into pastry. |
