OLD FASHIONED EGG CUSTARD PIE 
3 eggs, beaten
1/4 tsp. salt
2 c. milk, scalded
3/4 c. sugar
1 tsp. vanilla
Ground nutmeg
1 unbaked 9" pie shell

Combine eggs and sugar, beating well; add salt and vanilla. Gradually add scalded milk, stirring constantly. Pour mixture into pie shell and sprinkle with nutmeg.

Bake at 400 degrees for 10 minutes. Reduce oven temperature to 325 degrees and bake an additional 25 minutes or until a knife inserted halfway between center and edge comes out clean. Cool thoroughly before serving. Yield: 1 (9") pie.
