OLD FASHIONED EGG CUSTARD PIE 
Pastry for a 9" pie shell (unbaked)
3 lg. eggs or 6 egg yolks, slightly beaten
1/2 c. sugar
1/2 tsp. salt
1/4 tsp. nutmeg
1 tsp. vanilla
2 2/3 c. milk

Beat eggs then beat in remaining ingredients. Pour into 9 inch pastry lined pie pan. Bake at 450 degrees for 15 minutes, then reduce heat to 350 degrees and bake about 25 minutes more until a silver knife inserted in side of filling comes out clean. The center is soft, but will set later.
