EXTRA-CHEESY SCALLOPED POTATOES
GRATIN
 
5 large potatoes
1 large onion
1/2 cup (1 stick) unsalted butter, cut into thirds
3 tbsp. all-purpose flour
1 pkg. cheese sauce (from mac and cheese box)
1 cup shredded extra sharp cheddar cheese
1/2 cup Italian seasoned bread crumbs
1/3 cup grated Parmesan cheese
salt, pepper, and parsley to taste

Peel potatoes, cut them in half, then slice them about 1/8-inch thick. Peel onion, cut it in half, and slice thinly.

Preheat oven to 350°F. Butter the bottom and sides of a 9x13-inch baking pan. Cover bottom of pan with slices of potatoes and onions; sprinkle a third of the flour over all, then one-half of the cheese sauce; one-third of the stick of butter, cut into small pats, and lay the pats on top of the layer.

Sprinkle layer all over with salt, pepper and parsley. Repeat process to add another layer of everything. Finish with the last pats of butter dotted on top; sprinkle the 1 cup extra sharp cheddar cheese over the entire top of dish, then the 1/2 cup of Italian seasoned bread crumbs and 1/3 cup Parmesan cheese, and more salt, pepper, and parsley to taste.

Bake, uncovered, for about 40 minutes (check for doneness around 30 minutes, try baking it another 10 minutes at a time) until cheese is melted and top is golden brown.
