BAKED CHICKEN PARMESAN 
2-3 lb. cut up fryer, or 2 split breasts
1/4 tsp. garlic powder
1/4 tsp. paprika
1/8 tsp. thyme
1/4 c. Parmesan cheese
1/3 c. bread crumbs

Mix above in paper bag; shake a few pieces of chicken at a time. Oil shallow roasting pan. Pour in 1/3 cup water. Arrange chicken pieces in pan. Sprinkle chicken with 1 tablespoon oil and 1/4 cup melted butter.

Bake at 350 degrees uncovered for 30 minutes. Pour 1/3 cup Marsala wine or Burgundy wine; cover pan. Lower heat to 325 degrees and bake 15 minutes. Remove foil and bake 10 minutes longer at 350 degrees.
