BAKED PARMESAN CHICKEN 
1/2 c. fine dry bread crumbs
1/4 c. grated Parmesan cheese
1/2 tsp. dry mustard
1/2 tsp. paprika
1/8 tsp. pepper
2 whole chicken breasts, split (or boneless)
1/2 c. mayonnaise

Place bread crumbs, cheese, mustard, paprika and pepper in large plastic food bag; shake to blend well. Brush chicken on all sides with mayonnaise. Add 1 piece of chicken at a time to crumb mixture; shake to coat well. Arrange on rack in broiler pan so that pieces do not touch. Bake at 425 degrees for 30-35 minutes, or until golden brown and chicken is tender. Makes 4 servings.
