ZUCCHINI BREAD 
3 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
2 c. zucchini (mashed)
1 c. pecans (chopped) Can be put on top.
Whipped cream (optional) Can be put on top.

Combine first 5 ingredients. Set aside. Mix eggs, sugar, oil and vanilla in a large bowl. Mix until well blended. Add zucchini and pecans. Add all ingredients stirring just until moistened.

Spoon batter into 3 greased and floured 1 pound coffee cans. Bake at 350 degrees for 55 to 60 minutes or until a toothpick will come out clean. Cool 10 minutes and remove from cans. This can be cooked in loaf pans.
