JOAN'S ZUCCHINI BREAD 
2 c. flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
3 tsp. cinnamon
1 1/2 c. sugar
3 eggs
1 c. cooking oil
2 tsp. vanilla
2 c. shredded zucchini
1 c. nuts (walnuts or pecans) (optional)
1/2 c. raisins (optional)

Mix flour, baking soda, salt, baking powder and cinnamon; set aside. Beat sugar, eggs, cooking oil, vanilla and shredded zucchini until smooth. Add flour mixture and beat until blended well. Add nuts and raisins (optional). Bake at 375 degrees. If using 2 loaf pans bake for 40 minutes. If using 1 ring pan bake 45 minutes, (until toothpick comes out clean).
