OATMEAL COOKIES | |
1 large egg 1/2 cup sugar 1 cup brown sugar, firmly packed 6 tbsp. shortening (I use Crisco's butter variety) 1 tsp. vanilla 1 cup all-purpose flour 1 tsp. baking soda 3 cups oatmeal 1 cup shredded coconut 1/2 cup butterscotch chips or milk chocolate chips Preheat oven at 350°F. Mix together egg, sugar, brown sugar, shortening and vanilla until it all comes out smooth. Next, add flour and baking soda. The oatmeal, coconut and chips can then be gradually added to the whole works in small amounts. Next, roll small amounts of the dough between your hands to form a small ball. Bake them on an ungreased, aluminum cookie sheet at 350°F for 12 minutes. NOTE: Your oven's rack should be placed on the very bottom level of your oven. Allow these cookies to cool for at least 10 to 15 minutes before removing them from the sheet. Press them lightly a bit with a spatula, and they should come out perfectly round.
