BARBECUED PORK CHOPS | |
6 thick loin rib or center cut (boneless) chops 1 lg. onion, chopped 1 lg. green pepper, chopped 2 tbsp. brown sugar 1 tbsp. lemon juice 1 tbsp. Worcestershire sauce 1 tsp. chili powder 1/2 tsp. salt; optional 1/2 tsp. prepared mustard 1 c. water 1 (8 oz.) can tomato sauce Trim all but a thin layer of fat from chops. Heat large frying pan and brown chops well on both sides. Remove chops from pan. Saute onion and green pepper in pan drippings for 10 minutes or until tender, drain off any fat. Add brown sugar, chili powder, salt, mustard, and the water; mix. Arrange chops in single layer in pan; pour tomato sauce around chops; cover pan. Simmer 45-60 minutes or until chops are tender. Place chops on heated platter; slim any fat from sauce and spoon it over chops. Makes 6 servings. |
