BARBECUED PORK CHOPS 
4 rib or loin chops
1 tbsp. butter
1/2 c. onion, chopped
1 stalk celery, chopped fine
1/2 c. water
1/2 c. catsup
1 tbsp. vinegar
1 tbsp. lemon juice
1 tbsp. Worcestershire sauce
1 tbsp. brown sugar
1/2 tsp. dry mustard
1/2 tsp. salt
1/8 tsp. pepper

Brown chops in butter and remove from pan. Sauté onion and celery in browning pan. Add all other ingredients and simmer 20 minutes. Place chops in 9 x 13-inch pan or Dutch oven, pour 2/3 cup water over, then sauce. Cover and bake at 300°F for 2 hours.
