LEMON CHICKEN MARINADE 
1/2 cup extra virgin olive oil
1/2 cup lemon juice
1 tbsp lemon zest
1/2 tbsp kosher salt
1 tsp ground black pepper
4 large cloves garlic, peeled and roughly chopped

Put all ingredients into a blender or food processor until liquids are fully combined and garlic is well pureed. Mixture should be opaque and fairly thick. Pour over chicken and marinade for 4-8 hours.

Also makes a fantastic salad dressing if you cut down the garlic!

This is so good! We only cut the garlic in half so it wasn't so strong. Also it helped to poke holes in the chicken, it gave it more flavor.

I like this. we added more garlic (6 cloves at least) and salt (2 teaspoons) but I had 5 lbs of chicken thighs. Also added fresh basil and substituted fresh lime juice cause we had no lemons. Very simple and tasty

We made this tonight. Though it smelled great in the marinade, there was very little flavor in the chicken once cooked. Kinda boring.

This was delicious and very easy. We are on Weight Watchers and counting points so I cut the olive oil down to just 1 tablespoon and increased the lemon juice to 1 cup. The chicken had a very nice and robust flavor. Even my picky eaters loved this recipe and asked for seconds.

Thanks for this easy and tasty recipe! I added some herbs to the mix, cut the chicken into cubes and marinated for just half an hour then cooked on skewers on the bbq and it was delicious! Needed something in a hurry and was good not to have to wait too long for taste!
