PANCAKES 
1 c. flour
1 tbsp. baking powder
1 tbsp. sugar
1/2 tsp. salt
1 egg, beaten
1/2 c. each orange juice and water
2 tbsp. vegetable oil

Mix together dry ingredients. Combine egg, orange juice, water and oil. Add liquid to dry ingredients, stirring until moist. Let mixture rest for 30 seconds. Spoon or pour batter onto greased hot griddle. Bake pancakes until bubbles appear on upper surface. Turn over and cook until bottom is golden. Yield 12 large cakes.
