BROCCOLI FRITTATA 
2 1/2 tbsp. finely chopped onion
2 tsp. butter
1 pkg. (10 oz.) frozen chopped broccoli, cooked and drained
1/2 sm. clove garlic crushed (optional)
1 c. cooked rice
2 1/2 tbsp. grated Parmesan cheese
2 eggs, slightly beaten
1/4 c. milk
1/2 tsp. salt (optional)
Dash of ground black pepper
1/3 c. grated Mozzarella cheese

Saute onion in butter until tender but not brown. Add broccoli, garlic, rice and Parmesan cheese, mix well. Combine eggs, milk, and seasonings.

Stir into rice mixture. Turn into a well buttered shallow 1 quart casserole. Top with Mozzarella cheese. Bake at 350 degrees for 20 to 25 minutes until set.
