BRUNCH CASSEROLE 
2 c. frozen hash brown potatoes
1 c. shredded cheddar cheese
2 tbsp. chopped onion
1 lb. sausage
1 (4 oz.) can mushrooms
4 eggs
1/2 c. milk
1/2 tsp. salt
1/4 tsp. pepper

Thaw potatoes and put into a greased 8 inch baking dish. Top with cheese and onions. Brown sausage and drain and crumble. Spread over cheese. Add mushrooms. Mix eggs, milk, salt and pepper. Pour over other mixture. Bake at 350 degrees for 30 minutes.
