ORANGE CANDY 
3 c. sugar
1/4 c. water
1 c. undiluted evaporated milk
Pinch of salt
2 tsp. grated orange peel
1 c. chopped walnuts

Put 1 cup of the sugar into a heavy frying pan and stir over medium heat until the sugar is melted and caramelized to a golden brown. Add water and stir until sugar redissolves. Add the remaining 2 cups sugar, milk and salt. Turn on low heat and stir until the mixture boils. Stir frequently until it reaches the soft ball stage.

Remove from heat. Cool to lukewarm without stirring. Add orange peel and nuts. Beat until the candy loses its gloss and will hold its shape. Pour into a lightly buttered pan. Cool. Cut into squares.
