MEXICAN ORANGE CANDY 
3 c. sugar
1 c. evaporated milk
Grated rind of 1/2 lemon
1/4 c. boiling water
Grated rind of 2 oranges
1/2 c. nutmeats, broken
1/4 tsp. salt
4 tbsp. butter

Place one cup of the sugar in a heavy frying pan (preferably cast iron) and melt over very low heat. Add the boiling water and cook until the mixture is a heavy, smooth syrup. Add the remaining two cups of sugar, evaporated milk, and the salt. Combine cooking until the candy forms a firm ball when tested in cold water (250 degrees). Add the grated rinds and the butter. Cool slightly and then add the nuts and beat until smooth and creamy. Pour into shallow buttered pan; mark into squares when cool.
