CHEDDAR CHOWDER 
2 c. water
2 c. diced potatoes
1/4 c. chopped onion
1 tsp. salt
1/2 c. diced carrots
1/2 c. diced celery
1/4 tsp. pepper

Combine water, potatoes, carrots, celery, onion, salt and pepper in large kettle. Boil 10-12 minutes.

Meanwhile, make the white sauce in a small saucepan.

WHITE SAUCE FOR SOUP:

1/4 c. butter
1/4 c. flour
1 c. cubed ham or bacon
2 c. milk
2 c. grated Cheddar cheese

Melt butter, add flour and stir until smooth, slowly, about 1 minute. Then slowly add milk, cook until thickened. Add grated cheese to sauce and stir until melted. Add white sauce and cubed ham to vegetables that have not been drained. Heat through real good and serve.
