PECAN SWEET POTATO CASSEROLE 
5 lg. sweet potatoes, baked
1/2 c. butter, soft
1/2 c. granulated sugar
2 eggs, beaten
1 tsp. vanilla
1/3 c. milk
1/2 c. heavy cream
1/3 c. butter
1 c. pecans

Mash 1/2 cup butter with sweet potatoes. Add sugar, vanilla, milk and beaten eggs. Pour into casserole. Simmer cream. Add brown sugar, stir on medium to boiling point. Remove from stove add butter and chopped (coarsely) pecans. Pour over sweet potato mix. Bake at 350 degrees, check for brown top after 30 minutes. Serves 8.

This was a great recipe but there is no indication as to how much Brown Sugar to use in the topping. I use 1/2 cup and it turned out great.

Can this be classified as a vegetable? I put it in the Candy file. Lots of work, but oh how heavenly. Must be experienced. Instructions skimpy. I used the 1/2 cup brown sugar.
