RHUBARB STRAWBERRY CRISP 
4 c. rhubarb pieces (about 1 lb.)
2 c. sliced strawberries
1 c. sugar
1 1/3 c. flour, divided
1/2 tsp. cinnamon
1 c. brown sugar
1 c. old fashioned rolled oats
1/4 tsp. nutmeg
1/2 c. butter, melted & cooled

In large bowl combine rhubarb, strawberries, sugar, 1/3 cup flour and cinnamon. Transfer to greased 9 x 13 inch baking dish.

In another bowl combine remaining 1 cup flour with brown sugar, oats and nutmeg. Add butter and blend well to create the streusel. Sprinkle streusel over rhubarb mixture and bake at 350 degrees for 35-40 minutes.

This is the best and easiest crisp recipe I have ever made. I added nutmeg to the rhubarb mixture also and it was fabulous. Could not decide if I was just hungry for rhubarb or if it was really awesome. IT IS REALLY AWESOME! We have it with vanilla ice cream or just by itself, warm or cold.

I followed this recipe loosely while hosting a "clean-out your cupboards" potluck, after having been inspired by a similar strawberry crisp at a friend's dinner party the week before. I substituted frozen blueberries and blackberries for the rhubarb (un-cluttering my freezer), and was generous with the cinnamon and nutmeg. The crisp was super easy, and turned out great (a true crowd pleaser). I can only imagine how much better it will be when I use fresh berries. Hoping to toss in some pitted cherries next time.

Delicious, but just too sweet. I will follow the same recipe but reduce the white sugar by at least a third. The strawberries are already sweet and are the reason for pairing w/ the rhubarb.
