AWESOME STUFFED BELL PEPPER
CASSEROLE
 
I usually double the recipe.

2 lb. ground beef
1 garlic clove, minced
1/2 (12 oz.) bag frozen chopped onions
1 (16 oz.) bag frozen bell pepper strips
salt and pepper, to taste
1 (23 oz.) can tomato soup, divided (family size or 2 regular)
1/2 (12 oz.) bottle chili sauce
shredded cheese, for sprinkling (your choice)
1 cup raw rice, cooked (I use Jasmine)

Prepare a small pot of rice according to package directions and set aside.

In a skillet, fry the ground beef, garlic, onions and bell peppers until meat is no longer pink. Drain well.

Add 1/2 can of soup and chili sauce to skillet. Season with salt and pepper. Add the pot of cooked rice. Mix well.

Transfer to a baking dish. Top with remaining soup and finally top soup with shredded cheese.

Place in a 350°F oven and bake until the cheese melts. Enjoy!
