1 1/2 c. all purpose flour
3/4 c. sugar
2 1/2 tsp. baking powder
3/4 c. milk
1 egg
1/2 c. shortening
1 1/2 tsp. vanilla
1/2 tsp. salt

Grease and lightly flour a 9 x 9 x 2-inch baking pan. In a small mixing bowl combine all ingredients. Beat 2 minutes on medium speed. Turn into pan.

Bake in a pre-heated 375°F oven for 25 to 30 minutes or till done. Cool.

Serves 9.

Variation: Add 1/4 cup nuts.
