MERRYFIELD APPLE CAKE 
3 c. all-purpose flour
2 c. sugar
1 c. salad oil
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla extract
3 eggs
1 c. chopped California walnuts
1/2 c. chopped raisins
3 diced, peeled, cooking apples

Preheat oven to 325 degrees. Grease well and flour two 8-inch square cake pans.

In large bowl with mixer at low speed, mix well first 7 ingredients, constantly scraping bowl. Beat 3 minutes more, occasionally scraping bowl. Stir in apples, nuts and raisins. Spread in pans. Bake 1 hour. Cool on wire racks. Place paper doily on each cake; sprinkle with confectioners sugar. Remove doilies.
