PORK CHOPS IN SPANISH RICE 
6 pork chops
1 cup raw rice
1/2 cup chopped onion
1/2 cup finely cut green pepper
1 cup tomato juice
1 1/2 cups water
1 tsp. salt
1 1/2 tsp. sugar

Brown pork chops; remove. Brown rice and onions in drippings. Add all other ingredients. Lay pork chops in rice mixture.

Bake at 350°F in a covered roaster for one hour or until rice and chops are tender.

Note: If rice becomes dry, add tomato juice and water.

Serves 6.

This tasted just like Mom's! Of course I added 2 cans of diced tomatoes instead of tomato juice (doubled the recipe) Very Good!! I actually wrote it down.
