APPLESAUCE PANCAKES WITH APPLE
SYRUP
 
2 c. buttermilk baking mix
1 c. milk
2 eggs, beaten to blend
1 c. applesauce
1 tbsp. (or more) butter

Combine first 4 ingredients in large bowl and mix well. Melt 1 tablespoon butter in large skillet or griddle over high heat. Add batter to skillet 1/4 cup at a time. Cook pancakes until browned, turning once, about 1 minute per side. Repeat with remaining batter, adding more butter if necessary. Serve immediately, passing apple syrup separately. 8 servings.

SYRUP:

1/2 of 10 oz. jar apple jelly
1/2 c. applesauce
1/4 tsp. cinnamon
Pinch ground cloves

Melt jelly in saucepan over low heat. Add remaining ingredients. Stir until heated through. Serve immediately. Makes 1 cup.
