SWEET POTATO - ORANGE - APPLE
CASSEROLE
 
Remove skins from 2 large, cooked sweet potatoes (about 1 1/2 pounds). Peel and slice 2 cooking apples. Slice sweet potatoes 1/2 inch thick.

In a buttered 9 inch pie pan arrange layers of sweet potatoes and apples. Dot each layer with butter using about 1 tablespoon butter in all.

Sprinkle over each layer this mixture made by combining: 1/2 tsp. cinnamon

Pour over all 1/2 cup orange juice. Bake at 375 degrees for 15 minutes. Remove from oven and dot with an additional tablespoon butter. Return to oven and continue baking 15 minutes or until top has browned.
