CRANBERRY, APPLE, SWEET POTATO CASSEROLE | |
5 to 6 sweet potatoes, cooked and peeled or 2 (18 oz.) cans sweet potatoes, drained and cut 1 (21 oz.) can apple pie filling 1 (8 oz.) can whole cranberry sauce 2 tbsp. apricot preserves 2 tbsp. orange marmalade Cut fresh potatoes, bite size pieces or your canned sweet potatoes. Spread apple pie filling into an 8x8 inch baking dish. Arrange sweet potatoes on top of filling. In a small bowl, stir together cranberry sauce, apricot preserves, orange marmalade. Spoon over sweet potatoes. Bake uncovered in a 350 degree oven for 20 minutes or until heated through. 6 to 8 servings. |
