SWEET POTATO AND APPLE CASSEROLE 
3 med. sweet potatoes, peeled & thinly sliced
2 lg. apples, peeled & sliced
2 c. miniature marshmallows
3/4 c. sugar
1 tsp. salt
1 tsp. cinnamon
1/2 c. orange juice (may use water)
2 tbsp. cornstarch
4 tbsp. butter

Spread half of sweet potatoes in bottom of 3-quart casserole. Top with half of apples and marshmallows. Repeat layer with remaining potatoes, apples and marshmallows. Combine sugar, salt and cinnamon; sprinkle over casserole. Dissolve cornstarch in water; pour over sugar mixture. Dot with butter; cover. Bake at 350 degrees for 1 hour. Yield: 6 to 8 servings.
