PEPPER STEAK STIR-FRY 
1 bag UNCLE BEN'S® boil-in-bag rice (family serving)
1 tbsp. butter
3/4 lb. beef top sirloin, cut in thin strips
1 tsp. minced garlic
1 c. sliced fresh mushrooms
2 c. thin pepper strips (red, green or yellow) or combination of bell peppers
1/4 c. beef broth or bouillon
1/2 tsp. freshly ground pepper
1/2 tsp. salt
1/4 c. sliced green onions with tops

Cook rice according to package directions. While rice is cooking, melt butter in 190-inch skillet over medium-high heat. Add beef and garlic. Cook and stir 2 minutes; push to one side of skillet. Add mushrooms. Cook and stir 1 minute. Add pepper strips, broth, pepper and salt. Cook and stir until peppers are crisp-tender, about 2 minutes. Stir in green onions. Serve over hot cooked rice with additional meat or pepper, if desired. Makes 4 servings.
