PEPPER STEAK STIR-FRY 
1 bag UNCLE BEN'S® rice in boil-in-bag family serving
1 tbsp. butter
3/4 lb. beef top sirloin, cut in thin strips
1 tsp. minced garlic
1 c. sliced fresh mushrooms
2 c. thin pepper strips (red, green or yellow bell peppers or a combination
1/4 c. beef broth or bouillon
1/2 tsp. freshly ground pepper
1/2 tsp. salt
1/4 c. sliced green onions with tops

Cook rice according to package directions. While rice is cooking, melt butter in 10 inch skillet over medium high heat. Add beef and garlic. Cook and stir 2 minutes; push to one side of skillet. Add mushrooms. Cook and stir 1 minute. Add pepper strips, broth, and seasonings. Cook until peppers are crisp-tender, about 2 minutes. Stir in green onions. Sprinkle with additional pepper if desired. Makes 4 servings.
