IRENE'S POTATOES 
3 lbs. peeled potatoes, cooked & mashed
1/2 c. butter
2 pkgs. (3 oz.) cream cheese, room temp.
1 green pepper, chopped
3 to 4 green onions, chopped
1 sm. can minced pimento with juice
1/2 c. cheddar cheese, grated or cubed
1/2 c. Parmesan cheese

Cook and whip and salt potatoes. Blend in, beating constantly butter, cream cheese, green pepper, onions, pimento and cheeses. Mixture should be fairly moist. If not, add cream or butter. Pile into oven proof serving dish and bake, uncovered, at 350 degrees for 30 minutes.
