IRENE'S YAM ROLLS | |
2 med. yams, cooked 4 c. flour 1/3 c. powdered milk 3 tsp. baking powder 1/2 c. shortening 2 pkgs. yeast 1 c. warm yam water 1 tsp. salt 1 c. sugar 2 eggs, beaten Combine yeast and warm yam water. Let set 10 minutes. Add salt, sugar, eggs and shortening. Mix well. Mix dry ingredients and add to first mixture. Knead well. Cover and let rise about 1 hour. Punch down, knead and shape into rolls. Let rise and bake at 500 degrees. This makes a large batch. |
