POLISH SAUSAGE SPLIT PEA SOUP | |
1 1/2 lb. Polish sausage or kielbasa 1 lb. washed split peas 1 stalk sliced celery 1 med. chopped onion 1 tbsp. minced parsley 1 tsp. basil 9 c. boiling water Salt and pepper 4 chopped carrots 2 med. diced potatoes Cut sausage in half, place in kettle with washed peas, celery, onion, parsley and basil; add boiling water, salt and pepper. Simmer 1 hour or until peas are tender. Add carrots and potatoes, cook another 30 minutes more or until vegetables are tender. If necessary, add more water, salt and pepper. Slice sausage and serve with soup. |
