APPLES AND ONION ROAST CHICKEN | |
1 whole roasting chicken melted butter, as needed salt and pepper, as needed 2 apples (Granny Smiths work best) 1 large onion 1 can of beer Thoroughly clean out chicken cavity and wash with cool water. After washing pat dry with paper towels. Coarsely chop apples and onion. Put one apple and half of the onion in a roasting pan. Put the other apple and remaining onion inside chicken cavity. Place chicken on V rack in the roasting pan. Spread melted butter all over the top and sides of the chicken. Season with salt and pepper as desired. Pour all of the beer into the bottom of the roasting pan. Cover pan with aluminum foil. Bake at 375°F for 40 minutes. After 40 minutes increase heat to 425°F and cook 15 minutes longer. Remove aluminum foil and cook 15 minutes longer or until golden brown. Remove chicken from oven and let sit about 5 minutes (so juices can marinate). Carve and enjoy! Submitted by: A. Hoover |
