GREEN PEPPER STEAK AND RICE 
1 1/2 lb. sirloin stead, cut in 1/4 inch thick strips
1 tbsp. paprika
2 cloves garlic, crushed
2 tbsp. butter
1 c. sliced onions
2 green peppers, cut in strips
2 lg. fresh tomatoes, chopped
1 c. beef broth
2 tbsp. cornstarch
2 tbsp. soy sauce
3 c. hot cooked rice

Sprinkle steak with paprika. Let stand a few minutes. Cook steak and garlic in butter until browned. Add onions, green peppers, tomatoes and broth; cover. Simmer about 15 minutes. Blend 1/4 cup water with cornstarch and soy sauce. Stir into steak. Cook until thickened. Serve over rice.
