SPINACH QUICHE | |
1 pie crust, partially baked 1 tbsp. parsley 1 tsp. basil 1 (10 oz.) pkg. spinach, thawed OR fresh 1 c. low fat 1% cottage cheese 1 c. buttermilk 1 tbsp. flour 1 egg 1 egg white 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. nutmeg 2 tbsp. sliced green onions Preheat oven to 375 degrees. Combine parsley and basil in food processor; set aside. Fresh spinach, tear off stems. Cook spinach 3 minutes in 1/2 cup water, drain. Combine cottage cheese, buttermilk, flour, eggs, salt, pepper and nutmeg. Using a food processor or bowl add spinach. Stir in onion and parsley, basil pour into partially baked pie crust. Bake about 30 minutes. 9 slices - 200 calories 17 sat fat cal. |
