BREAKFAST TACOS 
1/2 c. salsa
1/2 c. chopped onion
1 clove garlic, chopped
2 tbsp. butter
6 eggs, beaten
1/4 tsp. ground cummin
1 c. grated cheese; cheddar or Monterey Jack
1/2 avocado, cubed
8 taco shells, or warmed burrito shells

Saute onion and garlic in oil until soft. Add eggs, cummin and salsa. Scramble eggs until done. Remove from heat and stir in cheese and avocado. Place eggs in taco shells and serve. Serves 4.
