BREAKFAST BURRITO 
6 slices bacon
1 tbsp. butter
4 eggs, beaten
1 med. tomato, cored, seeded and chopped
4 soft tortillas
Salsa, if desired

Cook bacon until crispy. Break in pieces and set aside. Melt butter in skillet. Scramble eggs until almost done. Add bacon and tomato. Cook 30 seconds. Warm tortillas. Equally divide egg mixture in the center of the tortillas. Fold burrito style. Serve immediately with salsa if desired.
