YAM AND APPLE SCALLOP 
1 lb. can yams, drained, sliced
1 tbsp. lemon juice
1/2 tsp. mace
1/2 c. pecans, chopped
2 med. apples, cored, cut in rings
1/2 c. brown sugar
1/2 tsp. cinnamon
2 tbsp. butter, melted

Mix brown sugar, mace, cinnamon, pecans. Arrange a layer of yams in buttered 9 or 10-inch round dish. Add a layer of apples. Sprinkle with half of lemon juice. Cover apples with sugar mixture and drizzle on half the butter. Repeat layers. Cover with plastic wrap and cook on high for 15 minutes. Turn dish 2 or 3 times while cooking. Delicious! Serves 6.
