YAM & APPLE CASSEROLE | |
2 med. Granny Smith apples, peeled, cored & sliced 2 (16 oz.) canned yams, drained 4 tbsp. unsalted butter, melted 1/2 c. light brown sugar, firmly packed 1/2 c. dark corn syrup 2 tbsp. dry sherry 1 tsp. cinnamon 1/8 tsp. salt Preheat oven to 350 degrees. Grease 10 inch round pan/dish. Process yams in food processor with 2 tablespoons batter, sugar, corn syrup, sherry, cinnamon and salt until smooth. Spread 1/2 of mixture in dish; arrange 1/2 of apples; repeat. Brush with remaining butter; cover and refrigerate if made ahead. Bring to room temperature before baking. Bake 30 minutes uncovered. Perfect with your holiday turkey. |
