SCALLOPED SWEET POTATOES WITH
APPLES
 
4 1/2 tbsp. butter, divided
2 c. sweet potatoes (or yams), cooked and thinly sliced; divided
2 lg. tart cooking apples, peeled, cored an thinly sliced; divided
1/2 c. brown sugar, divided
Salt to taste

1. Heat oven to 350 degrees.

2. Grease 1 1/2 quart covered baking dish with 1/2 tablespoon of butter. Arrange half the potatoes in an even layer on the bottom of the dish. Cover with half the apples. Sprinkle with half the brown sugar and dot with half the remaining butter. Sprinkle with salt.

3. Repeat layers with remaining ingredients.

4. Bake, covered, for 30 minutes.

5. Remove cover and baste with juices in dish. Bake, uncovered, 30 minutes longer; baste again.

6. Serve.
