MASHED "POTATO" (CAULIFLOWER)

cauliflower (medium/large head of cauliflower)
1/4 cup grated Parmesan cheese
1/2 medium onion, chopped
1/2 cup non-fat cottage cheese
1/4 cup egg whites
1/4 tsp. garlic powder
1/2 tsp. salt (or to taste)
pepper, to taste
1 tsp. Italian seasoning
1/2 cup shredded Mexican "fiesta" cheese blend, divided
17 pepperoni slices, divided (I like turkey pepperoni)

Preheat oven to 375°F. Spray an 8x8-inch glass casserole dish with non-stick cooking spray (Pam). Wash cauliflower, and cut into segments small enough to place in food processor. Pulse until cauliflower reaches a rice-like texture.

Place cauliflower in microwave safe bowl and microwave for 8 minutes (do NOT cover or add water).

Remove cauliflower from microwave and add the cauliflower back to the food processor, adding the Parmesan cheese, onion, cottage cheese, egg whites, garlic powder, salt, pepper, and seasonings. Pulse until mixture reaches the consistency of mashed potatoes.

Add 1/4 cup of the Mexican cheese blend, half the pepperoni slices, and stir until well combined. Scoop cauliflower mixture into casserole dish. Sprinkle remaining cheese and pepperoni over top.

Cover with foil and bake at 375°F for 25 minutes. Remove foil, and bake for an additional 5 to 10 minutes or until cheese is melted, and cauliflower is heated through. Remove from the oven and serve warm!
