SCALLOPED SWEET POTATOES AND
APPLES
 
12 qts. tart apples (about 18 lbs.)
11 1/2 c. sugar
3 tsp. salt
6 qts. cooked sweet potatoes (about 14 lbs.)
1 1/2 lbs. butter

Arrange sliced, pared apples in a layer over bottom of shallow baking pan or casseroles, using all the apples. Mix sugar and salt together well. Sprinkle half of the mixture over apples. Cover with cooked sweet potato slices and remaining sugar. Dot with butter. Bake for 30 to 40 minutes or until apples are soft and potatoes are glazed. Baste once or twice.
