FROG EYE SALAD | |
1 box Acini De Pepe (little bitty round macaroni) 1 c. sugar 1 3/4 c. pineapple juice 3 eggs 1/2 tsp. salt 1 lg. can drained, crushed pineapple 1 lg. can drained pineapple tidbits or chunks 2 lg. cans mandarin oranges 1 sm. pkg. miniature marshmallows 1 (12 oz.) container Cool Whip 1. Boil the macaroni in salted water until tender; drain and cool. 2. Mix sugar with pineapple juice, eggs and salt. Cook over medium heat, stirring constantly until mixture comes to a boil and thickens. Cool slightly and mix with macaroni. Refrigerate overnight. 3. Next day, add all the fruits and marshmallows and Cool Whip. Toss well. Serve cold. Serves 15 to 20 people. Great for showers, parties, special occasions, etc. |
