SWEET POTATO SCALLOP 
2 c. sweet potatoes, diced
2 c. thinly sliced apples
3/4 c. fine dry bread crumbs
1 c. maple syrup
1/4 c. butter, melted
Chopped nuts (walnuts or pecans)

Arrange sweet potatoes, apples and crumbs alternately in greased casserole (2 quart). Add maple syrup and dot with the butter. Sprinkle with nuts. Bake in 350 degree oven until apples are tender, about 45 to 60 minutes.
