BUTTERMILK FRIED CHICKEN 
2 c. plain flour
1 tbsp. salt
1 tsp. paprika
1/2 tsp. pepper
1 c. buttermilk
1 tsp. baking powder
3 lb. chicken breasts, legs, or whole chicken
Vegetable oil

Combine first four ingredients in plastic or paper bag. Mix well and set aside. Combine buttermilk and baking powder in a bowl and mix well. Dip pieces of chicken in the buttermilk mixture, then in the dry ingredients. Shake to coat. Repeat until all chicken pieces have been coated. Place in a pan and refrigerate for at least one hour. Heat oil (about 1 to 1 1/4 cup) to 325 degrees. Add chicken pieces and fry 30 to 35 minutes or until golden brown, turning once. Drain on paper towels. Serve with buttermilk biscuits.
