CHICKEN BROCCOLI CASSEROLE 
1 whole chicken
1 onion, chopped
1/2 c. butter
8 oz. Velveeta cheese, cubed
1 (10 3/4 oz.) can of cream of chicken soup
2 c. cooked rice
2 c. broccoli, cooked, chopped

Boil chicken. Remove meat from bones and cut into bite sized pieces. Saute onion in butter. Melt cheese and soup in saucepan. Combine all ingredients in a bowl and pour into a well greased casserole. Bake at 350 degrees for 30 minutes.
