CHICKEN RICE AND BROCCOLI
CASSEROLE
 
2 pkgs. frozen chopped broccoli
1 c. mayonnaise (mix 2 tbsp. of Miracle Whip with this)
1 c. rice, cooked
2 tbsp. onion
1 c. cracker crumbs (Ritz)
1 c. sharp cheese, grated
1 can cream of mushroom soup
1 pt. cooked chicken, cubed
1/4 lb. Velveeta cheese

Place crackers in a dish with melted butter. Stir until moist. Cook broccoli for 5 minutes. Mix the rest of the ingredients together, then add the broccoli. Place in a long baking dish. Spread the cracker crumbs on top. Bake at 350 degrees until browned or set.
