BROCCOLI, CHICKEN AND RICE
CASSEROLE
 
2/3 c. long grain rice
2/3 c. thin spaghetti (broken into bite size pieces)

Saute in 1/3 cup olive oil for 5 minutes to brown. Add: 1 c. broccoli florets 1/4 tsp. thyme

Boil, covered for 15 minutes. Add: 1/2 c. green onions, sliced 1/4 c. red pepper, diced

Cook 10 minutes more or until done.
